Phoenix hotels cashing in with food and beverage sales

PHOENIX — As visitors flocked to the Valley in 2017 for warm weather and tourist attractions, hotels in the Phoenix area saw an increase in food and beverage sales.

The average customer spent nearly $50 per restaurant visit at local hotel restaurants and bars, said Veronica Andrews, a director of digital data solutions for restaurant and hotel consultant STR, Inc. That’s an improvement over the prior year.

“We’re looking at a contribution of over $47 per seat in restaurants and bars,” Andrews said. “We’re looking at a growth of over seven percent over 2016.”

Andrews said the dining experience has been enhanced with changes in innovation and concepts that had a positive impact on food and beverage results in 2017.

As food and beverage sales increased, so did the average Phoenix hotel room rate.

Andrews said visitors spent just over $157 per night. That’s well above national average, according to Statista.com, which states the average national rate was $126.72.

This is a continuation of growth over every year since 2009, per Statista. Between 2016 to 2017, the average cost of lodging in the U.S. increased by about $3.

The only down numbers, according to STR, were catering and banquet revenue per available square foot in 2017. That decreased 1.2 percent from the previous year.
