Owners of Ahipoki and Char’d opening hand roll sushi bar in Phoenix

PHOENIX — The owners of two Valley restaurants are opening a hand roll sushi bar in Phoenix.

Dori Hand Roll Bar and Ramen plans to open at the Camelback Colonnade near 20th Street and Camelback Road in the early part of 2020.

The sushi bar will have hand rolls made to order by a personal hand roll chef and feature an extensive ramen menu.

Local ramen chef Jared Lupin, who has worked previously at Valley spots Republic Ramen, Umami Ramen and Shady Park, has partnered with the restaurant and will be its ramen chef.

Wade Foster Hospitality, the owners of Dori, own poke restaurant Ahipoki and Korean spot Char’d.

“This time there will be no holding back and I hope to introduce a ramen menu that expresses the joy of ramen that I’ve felt for years,” Lupin said in a press release.

Dori will also have a 15-seat Japanese speakeasy featuring designer cocktails and small plates called Uradori Izakaya in the back of the restaurant.
