Popup Bagels, Salt & Straw among first 5 tenants coming to Gilbert’s Heritage Park

East Coast bagels, chef-driven ice cream and a raw bar are headed to downtown Gilbert.
The first five tenants at Heritage Park, the mixed-use development under construction at Gilbert Road and Juniper Avenue, were announced Tuesday, with openings expected in early spring 2027.
The lineup includes Popup Bagels, the Connecticut-born shop making its Arizona debut, and Salt & Straw, the Portland, Oregon, ice cream brand known for inventive flavors, which will add a fourth metro Phoenix location.
Three other concepts will open their first East Valley locations:
- Hudson House, a New York-inspired restaurant with a raw bar, oysters and a self-proclaimed “World’s Coldest Martini”
- La La Land, a coffee and matcha cafe that runs a paid internship program for youth aging out of foster care
- [solidcore], a national fitness studio offering 50-minute strength workouts on reformer machines.
The tenants will anchor the 47,000-square-foot retail and restaurant space. The space will have a 288-unit apartment community slated to open in spring 2027, more than 300 parking spaces and a public square with water features, art and walking paths.
Later phases are expected to add a 125-room hotel and office space, according to developers Creation and Crescent Communities.
