Valley restaurant group reveals plans for new Italian chophouse

The team behind Bourbon & Bones, a Valley-based restaurant chain, is bringing a new Italian chophouse to Phoenix next year, it announced Tuesday.

Bistecca & Bones is set to open at High Street at City North, near 56th Street and Deer Valley Drive, in spring 2027. The restaurant will use the same practices as a Florentine steakhouse and offer premium cuts as well as a variety of house-made, fresh pastas.

The star of its menu will be a 40-ounce Porterhouse served flaming then sliced tableside called the Bistecca Florentina.

“In our recent travels, we were inspired, as many are, by some of the incomparable dining traditions of Italy, especially in Tuscany. It was special for us to add to what we already know from Bourbon & Bones and create this concept,” Square One Concepts Founder and CEO S. Barrett Rinzler said in a news release.

The eatery’s main dining room will be around 7,500 square feet and feature an extensive collection of wine, a large bar and display of fresh fish and shellfish, showcasing the seafood’s preparation and plating.

It will also have a 700-square-foot patio as well as a private dining room that is 2,200 square feet and can accommodate 100 guests.

The restaurant’s interior will consist of rich wood tones, natural stone, marble accents and layered lighting inspired by Italianate architecture and design.
