Global wine bar Humble Bistro now open in north Phoenix after delay

PHOENIX — The founders of Humble Pie have opened their new concept in Phoenix after a delay, the restaurant announced Tuesday.

Humble Bistro near Loop 101 and Tatum Boulevard debuts just over a week after the original opening date of March 22 was delayed.

The bistro is open each day this week from 3 p.m. to 9 p.m. before expanding hours of operation to noon to 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday and 11 a.m. to 9 p.m. on Sunday.

The menu mixes traditional recipes with fresh flavors while also offering wines curated from around the world, according to a press release, in addition to a variety of starters, such as flatbreads and fresh in-house made pastas.

“The food will transport you back in time, across Italy and through Spain featuring global flavors and traditional dishes that we’ve crafted with new world techniques,” Chef Jorge Gomez said in an earlier release.

“We’re excited to emphasize our made fresh daily pastas, and even feature some humble favorites from our sister concept, Humble Pie.”

Brick walls, bright lighting, antique decor and a small outdoor patio add to the wine bar’s old-world ambiance.
