A new Mediterranean fast-casual restaurant is now open in south Tempe. Feta Cowboy will offer diners full-customizable options.

PHOENIX – A new Mediterranean fast-casual restaurant is now open in south Tempe.

Feta Cowboy, located near Warner Road and McClintock Drive, will have diners go through an assembly line to build their own meal of fully customizable options. The concept restaurant was designed by the same team that created Pita Jungle.

Bowls, burritos, pitas and rustic flatbreads are some of the main offerings. In terms of toppings, guests can choose between different types of dips and sauces, calrose or basmati rice and brisket, birria, shawarma, taouk or gyro.

In addition, the ‘Lil Cowboys’ build-your-own kid’s meal offers meal personalization to the younger diners.

The 2,800-square-foot space will also feature indoor and outdoor dining, as well as a dining room inspired by Arizona and Southern California in the 1970s.

“At Feta Cowboy, the food and flavors are a delicious manifestation of our beautiful American gastronomical experience and the interconnectedness of global cuisine,” Bassel Osmani, co-founder of Feta Cowboy, said in a press release.

“Healthy nutrition and layers of flavor come together in unique ways to create simply amazing food.”

Feta Cowboy is open each day from 11 a.m. to 9 p.m.
