Mississippi-based Newk’s Eatery targets Phoenix for expansion with up to 20 locations

Newk’s Eatery, a Jackson, Mississippi-based fast casual restaurant chain, targeted Phoenix as one of its next growth markets – the furthest west the more than 20-year-old company has expanded.

The restaurant chain, known for its sandwiches, salads, soups and pizza, said that Newk’s could have up to 20 locations in the Phoenix area in the next several years.

The company is looking to grow its brand in Phoenix through a franchise model it is also pursuing in other markets, but does not have any local franchisees signed on yet. Chris Cheeks, the chief development officer at Newk’s, told the Business Journal he imagines several franchisees having their own piece of the Phoenix market.

“We want to have multiple franchisees building away in their own territories – if you have three or four franchisees, in four years you may have eight to 10 restaurants open in that market,” Cheeks said. “It’s typically better to develop that way.”
