Four delicious recipes for your next potluck

The days are longer and the kids are out of school.
Picnics and potlucks are plentiful this time of year. Food
bloggers’ mouthwatering recipes will leave you with
plenty of ideas to consider for your next outing —
and your bowl may just be licked clean.
Raspberry Mango Salsa. Dara of GenY Foodie
writes, “For me, spring means color. Fresh tasty
fruits and veggies.” She created an appealing raspberry mango salsa that has a
“really complex and tangy taste.” She suggests
serving it with grilled fish or chicken and taking it to
parties, if you can resist eating the whole bowl!
Fresh Blueberry Pie. It’s blueberry season,
and what better treat to bake and share than a fresh blueberry pie? This
particular recipe from A Healthy
Jalapeno calls for five cups of fresh blueberries and
takes “such little effort, it’s hard to even
realize how quickly it was made and done.” The
bright blue fruit is as appealing to the eye as it is to
the taste buds.
Black Bean Salsa. Alynn from Meals 4
Moms shares her trick to get her family to eat beans:

are very inexpensive but by themselves can be a bit
boring. Solve that by adding some fresh roma tomatoes,
green onion, garlic, jalapenos, green pepper, lime juice
and chopped cilantro — and you have a scrumptious,
healthy snack.
Creamy BLT Pasta Salad. The BLT sandwich is loved
by people of all ages, but it’s not very portable.
Instead, try the BLT pasta salad from Fabulous Foods,
and get your BLT fix at your next picnic or barbecue. The
key to “recreating that perfect BLT taste is to make
sure the bacon is crispy … and to use the freshest
lettuce and tomatoes possible.” Claire of Fabulous
Foods promises that “after one bite, you’ll
find it nearly impossible not to gobble up the entire
batch!”
