Thirsty Lion Gastropub plans to open its largest Arizona location at Westgate

PHOENIX — Thirsty Lion Gastropub announced plans Monday to open its fifth and largest Arizona location at Westgate in Glendale next year.
Located on the corner of West Coyote and Sunset Boulevard, the 9,800-square-foot restaurant will be a two-story design and feature a rooftop patio complete with an indoor/outdoor bar.
The dining room will be able to hold 400 guests when it opens in December 2022.
“Our newest Arizona location reflects the growth we see for the Thirsty Lion brand,” John Plew, president and CEO of Thirsty Lion Gastropub, said in the release.
“We are thrilled to bring our latest design to the West Valley because it is a thriving area with strong businesses, services and a great community around it. We look forward to connecting with residents and sharing this new gathering place with the Valley.”
Interior features include an open kitchen concept, full-service bar and flat-screen TVs, with guests on the second story of the restaurant experiencing open-air dining complete with a large bar and ample seating for parties. The downstairs patio can seat 266, while 90 people can be seated on the upstairs patio.
The menu is made up of various starters, lunch, dinner and dessert options; such as salads, sandwiches, burgers, and kitchen specialties like fish and chips, macaroni and cheese, orange chicken or tacos. Seasonal menus will also feature unique ingredients based on the time of the year, the company said.
Bar options include a large selection of unique craft cocktails, at least 20 different wines and a wide variety of beer, many of which are local to the Valley.
Thirsty Lion Gastropub opened its first Arizona location in the fall of 2011 and moved its headquarters to Scottsdale last year.
The gastropub also has locations in Colorado, Oregon and Texas.
