PHOENIX – Upscale Scottsdale chophouse Bourbon and Bones is poised to expand its base to the East Valley next month, opening a location in Gilbert, the restaurant announced.

The restaurant at San Tan Village is expected to open mid-January, parent company President and CEO S. Barrett Rinzler said in a recent press release.

“There’s demand for fine dining in the East Valley,” Rinzler said.

“We’re honestly thrilled to deliver our specialty chophouse to a community that’s perhaps underserved and appreciates fine food, fine wine, custom cocktails and the taste of great bourbon,” he said.

The new site near San Tan Loop 202 and Williams Field Road is larger than the Old Town Scottsdale location, at 6,750 square feet. The original restaurant, which opened in 2016 on Scottsdale Road between Fifth and Third avenues, is 4,000 square feet.

The Gilbert spot will feature two dining rooms, a private dining room and a patio.

The drinks list includes about 1,500 bottles of wine, whiskey, bourbon and classic cocktails.

Dining options include bone-in filet mignon, prime bone-in New York strip, rack of lamb, fresh seafood and salads and soups.
