PHOENIX – The downtown Phoenix Cambria Hotel is set to open later this month, bringing with it a new dining option for the trendy Roosevelt Row Arts District.
Poppy will start dishing up globally inspired meals made with locally sourced ingredients for brunch and dinner when the hotel opens Nov. 26 at Portland and Third streets.
The menu created by executive chef Nate Cayer will feature shareable plates with items such as grilled squash salad, coffee-rubbed lamb lollipops and beef tartare.
“Being new to Phoenix, it’s been a pleasure meeting local vendors, like our friends at The Fig and The Knife and Beetanical Garden, and developing a menu that incorporates their ingredients,” Cayer said in a press release.
“We can’t wait to get into the kitchen and serve up some incredible dishes for the neighborhood.”
Cayer previously served as executive chef at I|O Godfrey in Chicago’s The Godfrey Hotel.
“We were painstaking in our search for an executive chef,” Shaun Baker, the hotel’s general manager, said in the release.
“We have closely managed every last detail of the Cambria, from the local products in our lobby to the murals on the building’s exterior. But finding the right chef was one of the most important decisions we’ve made.”
The downtown Cambria will have 127 rooms in seven stories, topped by a rooftop pool and bar.
The hotel will be the Valley’s third under Choice Hotels International’s upscale Cambria brand, joining locations at Desert Ridge in Phoenix and Chandler Fashion Center.
It was developed by by Phoenix-based True North Studio and is managed by Oxford Hotels & Resorts.
