Thirsty Lion Gastropub & Grill to open 2 new Valley locations

PHOENIX — Thirsty Lion Gastropub & Grill is expected to open two new Valley locations by early next year.

One of the pub’s new spots will open at Desert Ridge Marketplace, while the other will set up shop at Chandler Fashion Center.

The north Phoenix location will be the 10th restaurant added to the shopping center near Loop 101 and Tatum Boulevard since its $22 million renovation in 2017, according to a press release.

The 6,500-square-foot restaurant is expected to open this fall.

“Desert Ridge Marketplace continues to establish itself as the place to be in the North Valley, evidence of how we chose where to open the fourth Arizona location,” John Plew, owner of Thirsty Lion, said in the release.

“We know our bold flavors and creative cocktail program will resonate with the Desert Ridge community, and we look forward to showing them what Thirsty Lion offers.”

The Chandler location will have a 7,600-square-foot interior and a patio that will be around 1,500 to 2,000 square feet.

It is expected to open near Loop 101 and Chandler Boulevard in February 2020.

The pub’s other Valley locations are at Tempe Marketplace, SanTan Village in Gilbert and Scottsdale Fashion Square.

It also has two locations each in Oregon and Texas and one in Colorado.
