PHOENIX — The culinary genius behind the La Santisima Gourmet Taco Shop locations in Phoenix and Glendale will soon expand his talents with the addition of a new restaurant.

According to Phoenix New Times, Felipe Guzman will soon open another Mexican-style restaurant, this time near central Phoenix.

La Marquesa will be a “celebration of Jalisco, the Mexican state of [Guzman’s] birth.” The restaurant will specialize in both birria, a spicy stew traditionally made from goat meat or mutton, and tequila.

The restaurant will serve birria with both goat and beef, tacos with lengua, carnitas, brain, cheek, and chamorro — a braised pork — and torta ahogado, “drowned in sauce almost like an enchilada-style burrito.”

“It’s going to be food from Jalisco,” Guzman told the publication. “All the food is going to be cooked in the brick oven.”

But with every good meal comes a good drink, and Guzman said guests will not be disappointed. He said there will be a wide variety of margaritas and other tequila drinks, as well as cocktails using various flavors of Jarritos, the Mexican soda.

La Santisima Gourmet Taco Shop has two locations, one at 16th Street and Palm Lane in Phoenix and another at 59th and Glendale avenues in Glendale.

Guzman owns the restaurant with his wife, Cristina, and his mom, Guadalupe. All three have studied cooking in Puebla, Mexico.

La Marquesa was expected to open at McDowell Road and 19th Street, just west of Tacos Chiwas, in May.
