After yearslong wait, Cornish Pasty Company opens in downtown Phoenix

PHOENIX — It’s been a long time coming — years, in fact — but the wait ended Wednesday: Cornish Pasty Company announced it had officially opened for business in downtown Phoenix.

“Go easy on us it’s a soft (opening) for now,” the company posted on Facebook. “Thanks so much for all the encouragement and faith!”

The process of opening the latest location near Central Avenue and Monroe Street was a long and winding road.

Downtown Devil reports Cornish Pasty first envisioned a move to downtown about a decade ago but that dream was slow to come to fruition as it got bogged down in construction the past three years.

“The demo probably took about three or four months alone,” founder Dean Thomas told the publication, adding that the space needed new plumbing and wiring along with a reworked support structure.

It also took a long time to build the location as the only funding for the project was profits from five other locations — four in the Phoenix area and one in Las Vegas. Thomas said he could have allowed the company to franchise to open the new location sooner, but did not want to.

The newest location is three-stories high and, much like the others, is themed as a working class pub in England. The restaurant will also have a dumbwaiter.

The original Cornish Pasty opened near Arizona State University’s main campus in 2005 and quickly became a hit. The eatery has locations in Mesa, Scottsdale and another in Tempe, in addition to the downtown and Las Vegas spots.
